Superfoods are something we could probably all do with eating more of. Trouble is, when you’re working all day long, it can be tricky to find the time to research and shop for the right recipe. But don’t worry… help is at hand. We’ve found 3 absolutely delicious recipes, which all use some kind of superfood. They’re super-nutritious and super-easy to make in your FlavorStone Diamond pans.
What’s great about your FlavorStone Diamond pan is you can cook with virtually no oil if you want to – good news if you’re trying to cut down on fat. It’s all thanks to the clever non-stick coating, which makes cleaning the FlavorStone Diamond pan really easy too – no more scrubbing off burnt-on bits! Plus, its square shape means you get about 25% more cooking space, which is handy if you have a family to feed.
Spelt spaghetti
Spelt spaghetti is high in fibre and helps keep your cholesterol in check
What you need
- Olive oil
- ½ a bunch of thyme (15g)
- 4 garlic cloves
- ½ red chilli
- 1 lemon
- 500 g ripe cherry tomatoes
- 250 g ricotta cheese
- 320 g dried wholewheat spelt spaghetti
- 4 handfuls of rocket
- Splash of balsamic vinegar
What you do
- Start by heating your oven to 180°C/gas 4.
- Pour 3 tbsp olive oil into a bowl and add the thyme leaves, finely sliced garlic and chilli, and grated lemon zest – season with salt and pepper
- Scatter the cherry tomatoes into your FlavorStone Diamond pan. Place the ricotta in the centre of the FlavorStone Diamond pan and rub with the flavoured oil – give the tomatoes a dressing too.
- Add a splash of water then pop into the oven and bake for 45 minutes before removing with the cool-touch handle.
- 10 minutes before you take it out, put the spaghetti on – cook for 10 mins in boiling salted water.
- Toss the pasta in the baked tomatoes and ricotta and serve with a splash of balsamic vinegar and a squeeze of lemon.
Pork With Brown Rice
This is a lovely gluten-free dish with healthy brown rice
What you need
- 2 green apples
- 1cm piece of ginger
- 150 g brown rice
- 200 g carrots
- 200 g tenderstem broccoli
- 220 g piece pork fillet
- Grated nutmeg
- 8 leaves of fresh sage
- Olive oil
- 2 oranges
- 2 tbsp natural yoghurt
What you do
- Cut the apples into quarters and remove the cores. Peel and chop the ginger and place in your FlavorStone Diamond pan with 300ml boiling water. Boil on high heat for 10 mins, then pour into a blender and blitz until smooth.
- Rinse out your FlavorStone Diamond pan and then use to cook the rice – 10 mins in boiling water – then drain and tip into a bowl.
- Boil the carrots in your FlavorStone Diamond pan for 15 mins. Add the broccoli for the last 3 mins then set aside.
- Meanwhile, season the pork all over with salt, pepper, nutmeg and sage leaves.
- When the veggies are done, use the FlavorStone Diamond pan to fry the pork for around 4 mins each side, then set aside to rest.
- Add the carrots back into the FlavorStone Diamond pan, pour over the orange juice and heat until reduced and sticky.
- Slice the pork and serve on a bed of rice, with the dressed carrots, broccoli and apple sauce.
Spinach & Blueberry Superfood Salad
Swap different ingredients in and out depending on what you have in
What you need
For the salad
- 2 packets of cooked grains
- 2 mugs baby spinach, washed
- 1 mug blueberries
- 1 mug grated cheddar
- ½ mug dried cranberries
- ½ mug raisins
- ½ mug sliced almonds
- Small handful of finely chopped basil
For the dressing
- 4 tbsp olive oil
- 4 tbsp honey
- 4 tbsp cider vinegar
- 2 tsp Dijon mustard
- 2 teaspoons Dijon mustard
- A good pinch of salt and black pepper
What you do
- Pop all your salad ingredients into your FlavorStone Diamond pan.
- Next, add all your dressing ingredients to an empty jar, pop the lid on and shake until well mixed.
- Pour ½ the dressing over the salad and toss together. Add more dressing to suit your taste and pop any left over into the fridge – it’ll keep for a week.
