Spicy Salmon & Tomato Traybake

Whip up an effortless tray bake in one single pan.

What you need

  • 1 red onion, finely sliced
  • 7 oz. (200g) cherry tomatoes
  • 3 tbsp mild curry paste
  • 14 oz. (400g) can chickpeas, drained and rinsed
  • 2 skinless salmon fillets
  • 2 naan breads
  • 2 tbsp plain yogurt
  • Lemon wedges for serving

What you do

  1. Start by heating your oven to 350°F (180°C).
  2. Mix the onion, tomatoes, curry paste, chickpeas and 6.5 ounces (200ml) of water together in your FlavorStone Diamond pan. Roast in the oven for 15 mins.
  3. Use the cool-touch handle to remove the FlavorStone Diamond pan from the oven and give everything a stir. Brush the salmon with curry paste and season with salt. Pop the salmon on top of the veg and out the FlavorStone Diamond pan back in the oven for 10 mins.
  4. Serve with warm naan and lemon wedges.

 

Nice & Light Fish Pie

Put your FlavorStone Diamond pan on double-duty to make this tasty fish pie.

What you need

  • 1 lb. (500g) diced swede
  • 1 lb. (500g) diced potatoes
  • 9 oz. (250g) tub of soft cheese with garlic and herbs
  • 5 oz. (150ml) vegetable stock
  • 1 tbsp. cornflour mixed with 4 tbsp. water
  • 14 oz. (400g) fish – cod, salmon and smoked haddock works well
  • 1 mug of frozen peas
  • Chopped parsley
  • Salt and pepper

What you do

  1. Start by pre-heating your oven to 350°F (180°C).
  2. Put the swede and potatoes in your FlavorStone Diamond pan, cover with boiling water and bring to the boil. Simmer for 20-25 mins until soft enough to mash. Drain, tip into a mixing bowl, season, then roughly mash and set aside.
  3. Meanwhile, put the cheese and stock in a small saucepan over medium heat and whisk until smooth. Add the cornflour to thicken, then remove from the heat and season.
  4. Stir the fish and peas into the cheese mixture and place in your FlavorStone Diamond pan.
  5. Spoon the mash over the fish mixture and use a fork to spread it out nicely. Then use the cool-touch handle to transfer your FlavorStone Diamond pan into the oven. Bake for 25–30 minutes, or until lightly browned. Garnish with chopped parsley and serve up.

 

Veggie Chilli With A Twist

Serve up this veggie favorite in healthy wholemeal tortilla bowls.

What you need

  • 10.5 oz. (300g) red lentils
  • 1 tbsp cooking oil
  • 2 onions roughly chopped
  • 4 garlic cloves, crushed
  • ½ tsp chilli powder
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 2 tsp paprika
  • 1 tsp ground black pepper
  • 2 tbsp tomato purée
  • 2x 17 oz (500ml) jars of tomato passata
  • 2 vegetable stock cubes
  • 3 courgettes, grated
  • 14 oz. (400g) tin black beans, drained
  • 4 wholemeal tortillas

What you do

  1. Start by pre-heating your oven to 350°F (180°C).
  2. Heat the oil in your FlavorStone Diamond pan over medium heat. Fry the onion until softened – 3-4 minutes should do it.
  3. Add the garlic, chilli powder, cumin, coriander, paprika and black pepper and fry for a minute or so until fragrant.
  4. Add the tomato purée to the FlavorStone Diamond pan and fry for a minute before adding in the lentils, passata, stock cube and ½ litre of water. Bring to the boil, then turn the heat down and simmer for 15 mins, covered with a lid, until the lentils are softened.
  5. Throw in the grated courgette and black beans, then simmer for 10 mins until thickened.
  6. Meanwhile, press a tortilla wrap into an ovenproof bowl. Brush with a little cooking oil then bake in the oven until crisped up. Repeat for each tortilla.
  7. Dollop a good spoonful of chilli into your tortillas. Top with your choice chopped avocado, lime wedges, chopped coriander, chopped tomatoes, or just a good sprinkling of cheese.
